Class Schedule

8 am at tailgate market – either North Asheville/UNCA or City Market on Charlotte Street Extension, check dates.

9:45 am – arrival at kitchen

10:00 am – 12:30 pm class

What to do with all that local produce and how do you get a wonderful meal on the table all week long?  Come to Saturday’s Kitchen and hone your skills and expand your culinary repertoire.

The idea is to concentrate a half-days shopping and work into meals for the remainder of the week, allowing you to bring the season’s bounty to your own table with minimum of effort.

Starting at one of Asheville’s great tailgate markets (North Asheville/UNCA or City Market on Charlotte Street), the day’s availability will determine what we cook.  Using all the various resources – bakers, pastry makers, cheese-makers, farmers and gardeners – we will shop and compose our week’s menu “on the fly”.  Of course I will have peeked ahead a bit, so there is some logic to our menus.

After the market visit, we head to the kitchen and organize and prepare the “foundation” for a series of meals through out the week.  Our goal in two and a half hours is to cook up a store, reduce a pile of fresh vegetables in a manageable mess and use them the remainder of the week.

ENTERTAINING WEEKENDS

A three day, weekend cooking school centered on using local ingredients as the basis for preparing a series of meals for entertaining.  Each weekend will present a different theme, such as “Cooking in a Wood-Fired Oven”, “The Riot of  Falls Gardens” or “The Elegance & Traditions of Burgundy”.

A combination of simple and advanced cooking techniques will be demonstrated with an opportunity for some hands on instruction.  Each of the days will feature a meal with matching wines following the conclusion of the class.
